Truth be told, the avocado toast trend has been around for awhile. However, me trying and then declaring, “omg avocado toast is the best thing ever,” sadly didn’t occur until this past summer. I accompanied John on his work trip to Australia a few months back and one of our hotel breakfast options was avo-smash. I ended up having this breakfast probably four times. It was on your choice of toast, with avocado smashed up goodness, goat cheese, pine nuts, and garnish. So good. Every time.
I probably ate more avocados on that trip that I had in the past 3 months combined.
When I came home to the states I was determined to make my own avocado toast and love it just as much. I started with “the classic” avo-smash and goat cheese.
Next, I moved onto adding a over easy or medium egg on top of the avo-smash.
Then one day I was jonesin’ for avocado toast during lunch time. Enter the BAT toast – bacon, avocado, tomato.
And finally, I played around with a fruity option as well! (Eli definitely liked this one the best – strawberries are his favorite!)
Here’s the good thing about avocado toast: you can’t mess it up! Seriously, there’s no “recipe” for these because you literally just smash up one avocado, add a sprinkle of salt and pepper, and you have yourself some avo-smash. Place on top of your favorite toast and you are ready to get creative with toppings! I’ve been using the little pitas from St. Joseph’s Bakery as my toast. They don’t bother my stomach!
