A while ago someone sent me a link to a date nut ball recipe and I was immediately intrigued. I eye-balled some of the ingredients and ended up with a lot more dates than needed. So this recipe is what was born – oats were added and cocoa too! You’ll see… enjoy!
Cocoa Date Cashew Bites
- 3 cups Pitted Dates
- 2 cups Raw Cashews
- 3/4 cup Oats (quick or old fashion work - use certified gluten free if needed)
- 5.5 tbsp Cocoa Powder
- 2 tsp Vanilla
Using a food processor, pulse dates, cashews and oats together.
Add in cocoa and vanilla.
Pulse until mixture is able to form together in balls - this will take some pressing on your part. Do not pulse too long, as it will make the oils from the cashews separate.
Using your fingers, press/roll mixture into bites. This will be the most tedious and longest part of the recipe.
Freeze bites for 10-15 minutes, then move them to the refrigerator.
